You have killed the special, the fish, the short rib and the last of the fries, and somewhere around the middle of the second seating you stopped being surprised by it. The board fills up. The night keeps coming. You are still standing at the end of it, which is the only part that was ever in question.
The design is drawn in a hand-lettered retro service-sign idiom: an oversized 86 with a hard offset shadow, Everything But Me in brush script underneath, BACK OF HOUSE across the base. Three flat inks, the way a diner sign was actually made. The whole range runs dark on purpose: back of house has a uniform, and this respects it.
If you are buying for a cook: this is the one that will actually get worn. It is their word, not a word about them. No toque, no pun, no explanation. Culinary-school graduates know the term on day one, which makes this land in May and June as well as it lands at Christmas.
